Cauliflower "Fried Rice"

  • 1 medium cauliflower (about 6 cups florets)
  • 1 tsp coconut oil
  • ½ red onion, diced
  • 1 inch ginger, minced
  • 3 garlic cloves, minced
  • 1 large carrot, diced
  • ½ tsp raw honey (optional)
  • 1 tsp sea salt
  • 1 cup cilantro, fresh
  • ¼ cup almonds, chopped (optional)
  • 1 lime, for juice


Pulse cauliflower florets in a food processor to a coarse "rice" texture. Sauté onion in coconut oil until translucent. Add ginger, garlic, carrot. Cook until tender.

Stir in the cauliflower rice, sesame oil, coconut aminos, honey, and salt. Cook until the rice is tender. Garnish with almonds, sesame seeds, and a squeeze of lime juice.

For a raw version, mix the cauliflower rice with onion, ginger, garlic, and veggies. Add the sesame oil, aminos, salt. Let it marinate and serve with the same garnishes.
